CARNITAS

 

4 tablespoons Wyomin' Dave's BBQ Seasoning
4 lbs Clark's Boston Butt cut into 2" cubes
1 cup water
1 teaspoon liquid smoke
1 onion, quartered
5 garlic cloves
 
Season pork with Wyomin' Dave's BBQ Seasoning. Place grate in the bottom of a roasting pan and pour water into the bottom of the pan along with the liquid smoke. Arrange the pork on top of the grate and top with onion and garlic. Cover with a lid or aluminum foil. Bake for 2 hours in a pre-heated 350 degree oven. Remove cover and bake until pork is tender, about 1 more hour. When cooked through, transfer pork to a large bowl and shred the meat. Stir in pan juices. Now you can serve this delicious meat a number of ways: in warmed tortillas with your favorite condiments, in tamales or in nachos!
